Now I just need to decide what I'm going to do with a Mac installation.

Any reason you did not go for a native install? It's not much harder than a vm one.

I virtualized OS X on OS X host but have since deleted it. I needed a 10.7 system to test. Now I have 10.7 (and also 10.6) installed on external 2.5" hard drives.

It is possible to get working on AMD, but you need to use a variant of osx86 that supports it out of the box. it takes kernel hacks (extra drivers).
That said, you'll get the best experience from intel hardware.

I haven't tried setting up a development environment yet.

I'm just using iATKOS though since after uploading my actual OSX image and following guides all day it ended up being the only thing that worked
